I had never heard of Swai before

so, when I ran across it in the grocery store I was kind of intrigued. We eat a lot of fish and finding something different to try is always a good thing.  So, I bought it.


Since we had never heard of Swai, we of course had never cooked it and so I pulled up some information about it on-line. Turns out the proper name is "Iridescent shark" though it's not shark at all, it's actually a type of catfish found in Southeast Asia. Anyway, while surfing around for information and recipes, I ran across a blog called Om nom nom (cute name, don't ya think?) that offered a super easy recipe for Swai.


It seemed quick and easy enough (plus, for once, we had all the ingrediants)so, I went for it! Man-o-man am I glad I did!  Jack and I (Madi was already in bed - worn slap out from four sleep overs in a row) thoroughly enjoyed it! The combination of wine, garlic and fresh basil paired with the fish was a wonderfully unique experiance!   Our tastebuds were thrilled!  Jack said it reminded him of Asian food, which he loves!   So, I did good!
